Abstract

The purpose of this study was to determine the best concentration of garlic extract in inhibiting e coli bacteria proliferation and the best storage time from beef meatballs has been soaked in garlic extract. Deskriptive statistical methods were used by soaking beef meatballs samples in garlic extract with different concentration, namely 0, 20, 40, and 60% for 15 minutes. Then samples are stored at room temperature ranging from 22-31 degrees celcius for 1, 3, and 5 days. The variable observed were e coli bacterial concentration using Total Plate Count (TPC) calculation. The results showed that the best concentration of garlic extract in inhibiting e coli bacterial proliferation was 40% and the best storage time was 1 day but can also be stored for 5 days

Abstract

Bawang Dayak (Eleutherine palmifolia (L.) Merr.) is a plant that is often utilized by the community as a traditional medicine because it contains active compounds that have antioxidant activity. People usually prepare them by boiling. In this study, bawang dayak are processed to herbal drinks to determine the antioxidant activity during storage. The study aims of this research is to determine the best bawang dayak herbal drink based on antioxidant activity and sensory attributes by studying the effect of the processing (raw material and sweetener composition) and storage. This research uses factorial design method with randomized block design with grouping in storage time of day 0 and day 7. Factor I consists of 2 levels: fresh bawang dayak and dried bawang dayak, while factor II is unsweetened and sweetened (sucrose). The analysis were the presence of phytochemical compounds, acidity (pH), antioxidant activity (DPPH method), and sensory analysis (hedonic 1-5). The results showed that bawang dayak herbal drink made from dried herbs (40 g in 1 L water) processed by boiling for 10 minutes, and stored for 7 days showed the best antioxidant activity with the value of % inhibition of 71.49%, and IC50 of 6.15 mg/ml, sensory attributes of hedonic scale of 2.9 for color (like slightly), 2.5 for aroma (like slightly) and 2.6 for taste (like slightly).

Abstract

The objective of this experiment was to know the effect of the interaction between Nasa liquid organic fertilizer concentration and  varieties durian, to know optimum Nasa liquid organic fertiliezer concentration to the growth could on Salisun varieties and Monthong varieties, and to know to the growth varieties the best of effect Nasa liquid organic fertilizer. The experiment was conducted at the village Bayur, District Sempaja North, Samarinda City, East Kalimantan Province.  Experiment factorial 2x4 was arranged in a Randomized Completely Block Design (RCBD) and eight times replication.  The first factor is the durian plant varieties (V) consisting of two, namely, v1= Salisun varieties and v2= Monthong varieties, and the second factor is the Nasa liquid organic fertilizer concentration (N) consinting of four levels, namely, n0= 0 mL L-1 water (control), n1= 2 mL L-1 water, n2= 4 mL L-1 water, n3= 6 mL L-1 water.  Data analyzed by Analysis of Variance, and continued by the  Least Significant Difference (LSD) test of 5%  to compare the average of two treatment. The results showed that treatment of  varieties  durian plant (V) significant different on the average increasing number of leaf at age 60 days after trans planting, and average increasing number of leaf age 90 and 120 days after trans planting,  but did not significant on the average increasing to the plant height, number of branch plant, and increasing plant stem diameter.  The treatment of  Nasa liquid organic fertilizer concentration (N), and interaction  between of varieties and Nasa liquid organic fertilizer concentration (VxN) did not significant on the all of variables observed.

Abstract

Bawang Dayak (Eleutherine palmifolia (L.) Merr.) is known as one of antioxidants sources because it has natural bioactive compounds such as phenol, flavonoids, tannins, glycosides, steroids, alkaloids which have good health benefits. Antioxidant can inhibit and prevent the damage caused by oxidation process of free radicals. Because of these benefits, bawang dayak is potential to be processed to a product such as herbal tea. The study aims to determine the effect of particle size formulation on drying temperature variation on antioxidant activity of bawang dayak herbal tea. The research method used is a randomized block design (RAK) of drying temperature consisting of one grouped factor that is the size formulation factor (F). The analysis  performed on tea stock were water content, ash content, and presence of phytochemical compounds, while in brewed tea were acidity (pH), antioxidant activity (DPPH method), and sensory analysis (hedonic scale 1 – 5). The results indicated that the particle size formulation on drying temperature variation had an effect on the antioxidant activity. The best result was obtained from 100% coarse size formulation at 50oC drying temperature with the value of inhibition percentage (%)  at 10 mg/ml of brewed tea is 77.38% and IC50 is 4.57 mg /ml brewed tea. The results of sensory analysis with hedonic scale for the treatment are for aroma (3.00; like slightly) and color (3.56; like), while taste can still be improved (2.32; dislike).

Abstract

This Research aim to know industrial tempe process and to know cost, revenue and tempe operating income. Pursuant to technical of making tempe, entrepreneur do not experience of constraint because entrepreneur have owned procedural knowledge and skill - way of managing the making effort and tempe sale. Produce making tempe during one month with total expense equal to Rp. 33.271.944 and acceptance equal to Rp. 48.600.000, so that the operating income obtained equal to Rp. 15.328.056. Through knowable Sensitivity Analysis that at Production Factor expense go up 5 %, price output descend 5 % and in the situation price output descend 5 % and the Production Factor expense go up 5 % happened the income degradation but the effort making tempe still be run competent

Abstract

This research aim to studi was to survival rate  of  the giant fresh water prawn from genetic resources pagatan river, Kintap river and Barito river.   The methot used this reserch was experimental design with completly random design (3X3). The results showed to the best survival rate from  genetic resources pagatan with SR=93,07%,  surviva rate genetic resources Barito with SR=90,40% and surviva rate genetic resources Kintap with SR=86,93%

Abstract

The purpose of this research is to know Revenue, Income,Profit, Feasibility and Sensitivity of Land Spinach Farming in Guntung Payung Village Landasan Ulin Sub District Banjarbaru City South Kalimantan Province. Method of Farmers by using Random Sampling that is taken 25 % from population amount of 112 land Spinach farmer , So obtained 28 farmer sampel. And for Income data (I)=TR-TEC, Profit (II) = TR-TC and Feasibility (RCR) =TR/TC.The result showed that Average Income  Land Spinach farmer is Rp 3.292.763,96/farmer, with Average Profit is   Rp 3.147.698,51/farmer . Average Feasibility of Land Spinach Farming type 4,39 means   Land Spinach farmer is Feasible to cultivate.  Sensitivity to the condition if the production cost rises 5 % is obtained Profit  Rp 3.101.297,44. Sensitivity to the condition if production price drops 5 % obtained Profit Rp 2.943.912,51. While Sensitivity to the condition if the production cost rises   5% and product price  drops 5 %  is Rp 2.897.511,44.

Abstract

Food security can be realized by applying the principles of sanitation in an industry. In this case, the SSOP (Sanitation Standard Operating Procedures) becomes a mandatory sanitation program for an industry to improve the quality of products and ensure a system of food production security. This research was carried out in three small-scale food industries (tofu, crackers and bread). Primary and secondary data obtained will be analyzed based on 8 key aspects of SSOP. Based on the key to implementing SSOP, basically the implementation of sanitation really needs to be improved, especially in terms of preventing cross contamination and eliminating pests. Efforts to implement hygiene workers are focused on the basic things, the using of gloves, masks and head covering (prevention of cross contamination), while the application of overall environmental sanitation by way of routine socialization directly or indirectly (through sanitation symbols attached to the area production) by industrial management.

Abstract

This study aims to analyze the nutrient content of coconut pulp fermented dregs tocrude protein content, crude fiber and crude fat with different levels of EM-4. The research method used was a complete randomized design (RAL), with four treatments and five replications, in which each replication consisted of a topless container of fermentation. The observed variables were crude protein, coarse fiber and crude axle. Data were analyzed using variance after previously conducted homogeneity test data. If the variance analysis shows a real effect then proceed with the test of the difference of the middle value using the BNT Test. The results showed that the nutrient content of the fermented coconut pulp to the crude protein content increased, while the crude fiber content and crude fat decreased, thus showing very different values significantly (p <0.01).

Abstract

Banana stem is one of the potential wastes of pertania for animal feed. The purpose of this study was to analyze the effect of addition of (SOC)® on the degree of acidity (pH) and Physical Quality at Banana Stage Silage. The research method used in this research is an experimental method using Randomized Complete Design (RAL). Treatment of SOC at concentration 0% (Control), 0,1%, 0,2%, 0,3% and 0,4% with storage time consist of 1, 3, 5 and 7 day with replication 4 times. The number of samples used are 80 samples used for pH and physical quality (Color, Odor, Texture and Mushroom Existence). The treatment given in the sample is P0 = 0% SOC (control), P1 = SOC concentration 0.1%, P2 = SOC concentration 0.2%, P3 = SOC concentration 0.3% and P4 = SOC concentration 0.4%. The results showed that the addition of SOC and Lama of storage significantly affect the pH value and the smell of banana tree silage. The best concentration is 0.3% and 0.4% with the best storage time of 5 and 7 days.
